Today marked the second delivery of my CSA share – well, it was actually the third delivery, but I missed last week’s due to my grandfather’s funeral.
Here’s what I got this week:

Salad greens
Green leaf lettuce
Swiss Chard

Rosemary. My favorite herb.  Broken Sprigs of it tossed into a pan full of fresh vegetables, roasted to perfection – sublime. Added to a salt-sugar brine, left overnight to delicately flavor a batch of pork chops – brilliant.

I recently discovered the best way to prepare pork chops – they will come out juicy, tender, and amazing every time.
Brine: Dissolve 2T salt and 2T sugar in 1 cup of lukewarm water. Let sit about 5 minutes, until the sugar and salt dissolve.

INGREDIENTS:
2 skinless, boneless chicken breasts
1/2 (10.75 ounce) can Campbell’s Healthy Request cream of mushroom soup*
1/2 cup low-fat sour cream
1 teaspoon chopped fresh rosemary
