Chef Mark Graham let me in on one of tonight’s specials at MezzaNotte Ristorante in Guilderland:

Chilean Sea Bass with Sweet Summer Corn, chanterelle mushrooms, and ciopollini.  Chef’s wine recommendation:  Glenora Riesling  (NY Finger Lakes) or Ferrari-Carano Fume Blanc (Sonoma County CA)

    Chilean Sea Bass? Really?
    I thought everyone was aware of this –

    Unless of course Chef Mark has access to the fish that come from the small fishery that is MSC certified. Any chance of you asking him directly. I don’t think he’s taking my calls.

    I actually wondered, too, so I asked him this evening. Mark assured me that his vendor meets criteria for sustainability. I didn’t ask about the MSC certification, but he seemed pretty confident that he wasn’t serving something he shouldn’t.

    I will have to press him further, but he was rushing out the door for a date with his wife!

    And, have you really tried calling him, or were you just being facetious?

    I was being facetious. I haven’t even emailed him with my Open Letter to Captial Region Chefs. You happen to have his email address?
