I went to the gym today, and did my first “Training for Life” workout. It was tough! 40 minutes of interval training – it was not easy for me. I really pushed myself. I didn’t realize I was capable of moving my legs for that long. Ha! Luckily, there’s an audio guide to go with the workout – she keeps you focused and motivated as you go along. I also bought the WalkVest, and used it today. I’m sure I looked ridiculous walking around the gym with it on, but I don’t care.
I feel obligated to add a food entry today…so here’s one of my all-time favorite breakfasts.
Creamy Brown Rice Pudding
- 3 cups cooked brown rice
- 4 cups skim milk
- 2 eggs, lightly beaten
- 2 Tablespoons cornstarch
- 1/4 cup water
- 1 teaspoon cinnamon
- 2 teaspoons vanilla extract
- 1/4 cup sweetener of your choice (brown sugar, Turbinado sugar, Splenda, etc.)
Heat rice and milk together in a large pot over medium heat; bring to a boil, stirring as needed. Turn heat down to simmer, and cook uncovered until mixture thickens, about 7 minutes.
Mix together eggs, cornstarch and water, stirring with a whisk until smooth. Add egg mixture to rice mixture, and cook stirring constantly until very thick – about 3 minutes.
Remove from heat, and stir in cinnamon, vanilla, and sweetener. Serve warm or cold. It’s also really good if you add about 2/3 cup raisins or dried cranberries with the rice/milk mixture at the beginning. Makes a lot. Just be careful not to get any eggshells in it (yes, I did that yesterday).
And, a random thought – am I the only one who absolutely LOVES diet ginger ale? I think I drank a six pack yesterday.
