Indian Spiced Walnuts

2 large egg whites, lightly beaten
1 1/2 teaspoon Hot Curry powder (I use the kind from Penzey’s)
1 tablespoon ground cumin (Penzey’s again)
1 1/2 teaspoon salt
1/2 teaspoon granulated sugar
4 cups walnut halves and pieces (or halves only, if you’re particular like I am)

1. Coat a large, shallow, baking pan with non-stick vegetable spray.
2. Mix egg whites with spices. Stir in walnuts and coat thoroughly. Spread in prepared pan.
3. Bake in 350 degree F oven for 15 to18 minutes, until dry and crisp. Cool completely before serving.


Alas, these little suckers are amazing. I wish they weren’t loaded with fat and calories, but there it is. Enjoy.
